Crispy Rice Power Greens Salad

Yields: 2 Servings
Ingredients
- 1/2 cup brown or white frozen rice
- 2 cups Earthbound Farm Organic Power Greens
- 2 teaspoons olive oil
- 1 clove garlic
- 1-2 tablespoons coconut oil
- 1 red bell pepper diced
- 1 shallot diced
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 2 green onions sliced
- 3 tablespoons chopped peanuts
- a bunch of torn cilantro
- 2 lime wedges
Place the power greens in a large bowl and massage with 1 teaspoon of olive oil. Set aside.
Heat a large skillet over medium heat and add 1 teaspoon olive oil. Once heated, add frozen rice and arrange in an even layer, leave to cook without stirring or flipping the rice for 2-3 minutes or until crisped. Stir and crisp the other side of the rice, remove from heat into a bowl and set aside.
Reheat the pan over medium heat. Add 1-2 tablespoons of coconut oil. Add the peppers and shallots and cook until softened, about 5 minutes. Add in the garlic and cook for 1 minute. Transfer the peppers and shallots to the bowl with the rice. Stir together.
In a bowl, whisk together the soy sauce, vinegar and sesame oil.
Gently toss the power greens with the crispy rice mixture. Serve on a plate and drizzle with the soy sauce mixture. Top with green onions, peanuts and cilantro! Spritz with lime and serve. Pairs nicely with a protein like chicken, or tofu.
