Creamed Parmesan Power Greens

Ingredients
- 1 lb Earthbound Farm Organic Power Greens
- 1 tbsp unsalted butter
- 1 tbsp all-purpose flour
- 3/4 cup whole milk
- 1/2 cup heavy whipping cream
- 1/4 cup grated Parmesan cheese
- 1/4 cup toasted breadcrumbs (optional)
- 1/4 tsp nutmeg (ground)
- coarse kosher salt (to taste)
- ground black pepper (to taste)
Rich and creamy power greens, blended with Parmesan cheese and a hint of nutmeg, will have your guests asking for seconds. It’s a delicious side dish with beef, pork, chicken or fish, and quick and easy to make.

Steam the power greens in a steamer basket over boiling water until it wilts, about 1 minute. Transfer the greens to a colander to drain and let cool. Squeeze out any remaining water in the greens using your hands or wrap the greens in a dish cloth and squeeze.
Melt butter in a large skillet over medium-low heat. Add the flour and cook for two minutes, whisking constantly. Add the milk and cream in a steady stream, continuing to whisk, and cook until the cream sauce thickens, another 2 minutes.
Add the power greens to the cream sauce and stir to combine. Stir in the Parmesan cheese, nutmeg and cook until the greens are heated through, about 1 minute. Season with salt and pepper to taste. If you are using breadcrumbs, place breadcrumbs in a small skillet and toast until golden brown. Remove from heat and sprinkle toasted breadcrumbs on top of dish. Serve hot.
Cook’s Note: Steam the greens until they wilt — be careful not to overcook!

These are SO good. Even my 8 year old asks for seconds. I like to think that the nutrition of the power greens make up for the heavy cream!!
