Boring salad?! NEVER! 🥭🍅🥬🥑🥒 Case in point: a recipe that’ll have you coming back for seconds (and thirds, and fifths...no judgment).
⠀⠀⠀⠀⠀⠀⠀⠀⠀
With a perfect combo of sweet and savory flavors, we officially dub this beauty the Mango-avo Kale-antro Cuke-Halloumi Salad.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Yeah, the name needs some work. But trust us, the taste will speak for itself.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
🥭 Ingredients:
4 oz Earthbound Farm Baby Kale, massaged
1½ cup cherry tomatoes, sliced
2 small cukes, sliced
1 mango, halved, pitted and grilled*
8 oz Halloumi, grilled
1 avocado, pitted and sliced
½ bunch cilantro, torn or chopped
Extra olive oil and lemon for the kale massage 🤪
⠀⠀⠀⠀⠀⠀⠀⠀⠀
🥗The Simplest Lemon Vinaigrette:
1 lemon
⅛ cup olive oil
1 tsp apple cider vinegar
Flaky salt, to taste
⠀⠀⠀⠀⠀⠀⠀⠀⠀
🤩Steps:
Start warming up the grill. Slice the cherry tomatoes, cucumbers, and mango. Place the mango and halloumi on the grill. They should be on long enough to both heat them and to leave some gentle char marks.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Meanwhile, place the baby kale in a bowl, and add olive oil and lemon. Massage until wilted and tender. Then slice the avocado and halloumi. Assemble all ingredients, dress with the vinaigrette, and enjoy!

For this one, we added fragrant basil, Kalamata olives, tangy tomatoes, and a champagne vinaigrette to pump up the YUM factor.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients:
3 oz Earthbound Farm Baby Arugula
2 cups bowtie pasta (don’t forget to salt the water!)
1/3 cup fresh basil, torn
2 tbsp olive oil, more to taste
4 tbsp champagne vinegar
1 lemon
1/2 cup Kalamata olives
1/3 cup feta cheese, cubed
1 1/2 cups cherry tomatoes
3 Earthbound Farm Organic Green Onions, sliced
Salt and freshly ground black pepper to taste

Tips:
☀️ Tear the basil in with the Baby Arugula for a rustic feel
☀️ Add a little olive oil and lemon to the Baby Arugula and basil, and squish with your hands to soften
☀️ Gently salt and oil the pasta before adding to the greens
