A savory, flavor-packed bite featuring the peppery kick of Earthbound Farm Organic Wild Red Arugula, creamy mozzarella, and tangy sun-dried tomatoes—all wrapped in delicate prosciutto.


Ingredients

6 slices prosciutto

cup Earthbound Farm Organic Wild Red Arugula

2 tsp olive oil

2 oz fresh mozzarella, torn into pieces

2-3 Tbsp sun-dried tomatoes, chopped

Salt and pepper, to taste

Balsamic glaze, for drizzling


Directions

Lay slices of prosciutto down slightly overlapping, with the longer side vertical.

Evenly spread Earthbound Farm Organic Wild Red Arugula over the lower half of the prosciutto. Drizzle with olive oil.

Scatter fresh mozzarella over the arugula, then season with salt and pepper.

Sprinkle chopped sun-dried tomatoes on top.

Optional: Freeze for 15 minutes to firm up, making slicing easier.

Unwrap and slice into even pieces. Drizzle with balsamic glaze and serve.
